Meal Plan 1/18--1/24 Family Favorites w/ a GF tweak!


I am a mid week planner.

It works better for our pay cycle and because we live in a tourist city, the grocery store is always insanely crazy on the weekends, full of landlocked visitors trying to stock up for their day at the beach....Needless to say NOT fun to grocery shop in, as if grocery shopping could ever be classified as fun.



This will be my first completely Gluten Free meal plan.  I am extremely intimidated and and really wish I had a 'been there done that' veteran to hold my hand through this experience.  My friends and family have been supportive, but they don't truly understand what I am talking about when I say "OMG, I have to buy a $30 bag of almond flour."  My husband is staying out of my hair and folding laundry.  Yes, I married the best man in the world, but just once, I would like for him to read the label and tell Avery 'Yes' or 'No' on a food request.

On with the plan...the plan is easy...it is the execution that is hard...

Dinners

Wednesday - Brinner-- Spinach & Sausage Crust-less Quiche

Thursday - Carne Asada Tacos (Shredded Beef)

Friday - Meat Loaf w/ Smashed Taters and Salad Salad

Saturday - Chicken Nuggets, Sweet Potato Fries, and Fruit Salad

Sunday - Home Made Taquitos, Fiesta Rice (recipe coming soon)Salad

Monday -  Smoked Sausage & Potatoes w/ Green Beans

Tuesday -Grilled Chicken, Steamed Veggies, and ? Chicken and Veggie Pizza

Avery's Lunches

Wednesday: School Tray...Crispy Tacos
Thursday: Ham & Cheese Kabob, Chips, Fruit
Friday: Peperoni & Olive Kabob, Veggies, and a Sweet
Monday: Taquitos, BabyBell, Veggies
Tuesday: Chef Salad?


Snacks to Make

  1. I tend to switch my planned days around a fair bit every single week as I roll with the punches =) Even when I don't follow it completely, having that plan in place is critical.

  2. Welcome to Gluten-Free living! Your menu looks great to me. The learning curve is always the hardest. I love the quote on your header - made me smile and nod my head in agreement. I thought I knew how to cook and bake, but then realized that I really just took short cuts.

  3. Thursdays are our Scout Days. My Husband is the Den Leader for my son's Cub Scouts and I attend all of my daughter's Girl Scouts, so we will definitely need easy-peasy stuff that day...use to just grab burgers or pizza. Oh, how I took that for granted...

  4. LOL!!! @Heather...I thought cooking rice meant cutting the corner off the Uncle Ben's Micro Pouch...I am (was)the ultimate slacker/shortcut mom!! This morning my daughter freaked out and was crying about never having apple pie again (she has randomly done this all week) I said " you can have it again, I just really need to learn to bake it." She looked at me all funny and said...."Mom, you've only ever bought pies." I am thinking her faith in my baking abilities are not that high...
